    How would you remove the gridpanel grouping feature expand/collapse icons?

    .x-grid-group-title:before {
        display: none;
    }
    You may want to scope those to within a special class you add on your grid, but they're the elements.

    Applying those CSS classes only moves the [+-] icon over it.

    It's probably hard to see in the image but it doesn't fully remove it. For some reason the gridpanel will not take any other CSS. Is there a way to completely override the CSS attached to a gridpanel?

    I've done cls: 'css-class-here' like this for example however the CSS never applies only to this gridpanel.

    have you inspected it and seen what rules apply, and what rules don't. and why?

    !important?
