Tutorial Request : How to create a new empty Sencha desktop (classic) and Theme it

I know there's some sample app associated with some contest, but I'd like to create my own
sencha app and then theme it.

How do I get started? I have the Sencha inspector installed, and I have an empty app and it has the "</> Theme" tab grayed out (disabled).
